Topic: Repointing Stone During Winter

We are restoring an old stone home by having the stucco removed and the stone repointed. My husband is very concerned about having this done during the winter as he is afraid that the concrete used to repoint will freeze when wet, creating air bubbles that will weaken the structure of the concrete. Seems logical to me - is this a real concern and if so, how do we approach our contractor, who is planning to do the work over the winter. Thanks, Ellen
